Our goals with this project

Goal #1 is to help support your academic performance. One of the ways to increase your odds at getting those A+s, is to have breakfast, simple as that!

  • Breakfast improves academic performance.
  • The more often we have breakfast, the better our academic performance. 

Goal #2 is to help you eat more variety by teaching you basic food skills. How will we do this:

  • Peer to peer activities at My Pantry (demos and tastings)
  • Videos of the recipes on our screens, along with all the ingredients available to make the dish yourself, anytime of day. 
Recipes for the month 

For all tastes, here are 4 featured recipes of the moment that will make most of you happy!

Bacon and egg grilled cheese

Bacon Egg Grilled

Ingredients

  • 2 eggs
  • 2 tbsp milk
  • 2 tbsp butter
  • 2 slices of bread
  • 2 tbsp shredded cheddar cheese
  • 3 slices fully cooked bacon


Directions

  1. Beat eggs in a bowl adding the milk, for about 30 seconds.
  2. Heat 2 tsp of butter in a large non-stick skillet over medium heat, add eggs and milk mixture.
  3. As eggs begin to set, gently pull the eggs across the pan, folding them until they have thickened no visible liquid remains.
  4. Remove from pan and wipe skillet.
  5. Add remaining butter to pan. Once melted, put the 2 slices of bread in the pan.
  6. Top one slice with 1 tbsp of cheese, cooked eggs, bacon and then the remaining cheese. Top with the second piece of bread, butter side up.
  7. Continue to cook, turning once, until bread is toasted and cheese melted

Huevos rancheros

Ingredients

  1. 1 tsp minced garlic
  2. ¾ cup of potatoes (blanched)
  3. ¼ cup of diced bell pepper mix
  4. ⅛ cup of diced onion
  5. ¼ cup of diced tomatoes
  6. 1 tbsp olive oil
  7. ½ cup of cooked ground chorizo sausage
  8.  ½ tsp of paprika
  9. 2 eggs
  10. 1 tbsp salsa
  11. Two 6” flour tortillas

Directions

  1. Put a large skillet/frying pan on medium heat with the olive oil.
  2. Add the chorizo sausage, and heat for roughly 2 minutes, or until golden.
  3. Add the garlic and cook for one minute.
  4. Add peppers and paprika, reduce heat to medium-low, and cook for another 4-5 minutes or until peppers have softened. Add onion one minute after peppers.
  5. Turn the heat up to medium-high, add the potatoes, and cook them for 2-3 minutes, stirring.
  6. Turn the heat to medium-low and add your tomatoes, cooking until slightly softened. Add a pinch of salt and pepper.
  7. Make 2 wells in your pan, crack an egg in each well, cover and cook for 3 more minutes.
  8. Put two 6” flour tortilla on plate, and transfer pan contents on top of tortillas. Top with salsa and serve immediately.

Vegetable chow mein

Ingredients

  1. 1 cup cooked egg noodles
  2. ¼ cup yellow/white onion
  3. ¼ cup bell pepper
  4. ¼ cup zucchini
  5. ¼ Sliced mushroom
  6. 1 tsp ginger
  7. 1 tsp garlic
  8. 2 tbsp canola oil
  9. Salt/pepper (to taste)
  10. 3 tbsp chow mein sauce (oyster sauce, soy sauce, rice vinegar, sugar, sesame oil)

Directions

  1. Put a Large skillet/non-stick pan on medium-high heat.
  2. Add 1 tbsp of oil and sauté the onion and bell pepper until just tender.
  3. Add zucchini and mushrooms and continue to stir-fry until golden brown.
  4. Transfer the vegetables to a bowl.
  5. Reheat the same pan until hot. Add 1 tbsp of oil, and sauté garlic and ginger for several seconds.
  6. Add the noodles and stir-fry them until they are thoroughly heated.
  7. Return the vegetables to the pan, add the sauce and toss until well combined.
  8. Serve immediately.

Western Omelette

Ingredients

  1. 2 eggs
  2. 2 tbsp milk
  3. 2 tsp butter
  4. 1 tbsp grated cheddar cheese
  5. 3 tbsp diced, cooked ham
  6. 1 tbsp diced onion
  7. 2 tbsp diced green pepper
  8. 2 tbsp diced tomato

Directions

  1. Beat eggs in a medium sized bowl for 30 seconds, adding milk gradually.
  2. Put a skillet/frying pan over medium/med-low heat and melt butter.
  3. Pour the eggs from the bowl into the skillet.
  4. Tilt the pan or use a spoon to move the eggs around the pan, cooking them evenly.
  5. Continue cooking eggs until almost firm in the center.
  6. Sprinkle cheese, ham and veg mix on top of half the egg in the pan, and then fold the other side over on top of the mixture.
  7. Continue cooking until the egg is firm and cheese is melted.
