Discover Haitian Cuisine

Chef Evens Rosier, one of our Dining Hall chefs shares with you recipes of popular dishes within Haitian cuisine.

Ingredients

  • 1 medium onion, diced
  • 1 tablespoon salt, more to taste
  • Assortment of green, red, orange peppers, sliced
  • Juice of ½ lime
  • 2 garlic cloves, finely chopped
  • Peppers crushed with vegetable oil
  • Pork shoulder, cut into cubes

Instructions

  1. Cut the pork shoulder into cubes
  2. In a bowl add the meat and juice ½ lime on it
  3. Add the spices and half of peppers to the meat
  4. Boil the meat on low to medium high heat for 20 minutes or until the meat is tender
  5. Remove the meat and fry in hot oil for 10 minutes
  6. Remove them from the oil and remove excess oil
  7. Add sliced onions and peppers to meat
  8. Ready to serve!

Ingredients

  • Codfish
  • Salt and pepper
  • Garlic, finely chopped
  • Parsley, chopped
  • ¾ cup of flour
  • Room-temperature water
  • 1 tbsp of yeast
  • 1 teaspoon baking soda
  • Chicken broth

Instructions

  1. Using a knife, shred codfish
  2. In a bowl combine fish with spices, parsley, and garlic
  3. Add flour, yeast, and baking soda to the fish
  4. Mix then incorporate chicken broth and water. Your dough is ready!
  5. Heat oil, spoon about 1 tbsp of the mixture into the preheated oil. Brown on all sides.
  6. Remove from oil and remove excess oil
  7. Enjoy!
